Kebaboom is a passionate and fun approach to food concepts translated into building a strong collection of ‘grab-and-go’ outlets inBaltic region and further across Scandinavia.

Uued Kebabipoed OÜ is an SPV formed to raise debt finance from loyal customers of existing Kebaboom outlets as well as people interested in becoming part of the Kebaboom’s expansion story.

The Concept

A chain of three new 15-30 sq.m. outlets in high footfall locations like shopping centres, markets etc.
Outlets will have the same layout, design, equipment range and unit elements that can be easily assembled by our experienced and highly skilled building contractors.
All product supplies will come from same sources as for original three Kebaboom outlets allowing Uued Kebabipoed OÜ to enjoy benefits of centralised purchasing power
Concept also allows for ‘dark’ kitchen sites that will predominantly be serving the home-delivery market

Igor Leesment
Co-Founder, Chief Operational Officer
Igor has a first-hand experience in ensuring that all processes related to running a successful restaurant, starting from the supply chain to setting and controlling restaurant’s profit margins, are managed smoothly and professionally. Igor had also held a position of the Head Chef in one of the Soho Restaurants in London. Like Andrei, Igor gained his professional experience in the UK and together they co-founded successful Kaja Pizza Köök project upon their return to Estonia.

Founder, Chief Creative and Conceptual Officer
Professional experience includes over 20 years working and managing kitchens in Michelin-Starred restaurants in London as well as over two years in running conceptual fast casual dining outlets in Tallinn, Estonia that include White Guide Nordic listed Kaja Pizza Köök, which was also voted to be in 50 top pizzerias in Europe and a Top Pizzeria in Estonia 2019-2021, as well as One Sixty BBQ.

Executive Chef
Akhmalion has over 15 years of experience working in the kitchens of many top restaurants in London under management of Andrei Lesment and since his relocation to Tallinn he has been successfully managing kitchen of One Sixty BBQ and he is now part of the Kebaboom’s team since its launch in May 2020.

  • Work to identify locations for the first three Kebaboom outlets under Kebaboom Trading umbrella has already began
  • Stage 1: Launch fundraising campaign to raise €40,000–60,000 min to have funds to open first Kebaboom outlet in Q1, 2022
  • Work to build elements of new outlets will be commissioned and orders to purchase various kitchen equipment will be placed so that we could have our first outlet launched within two months of successful fundraising

  • Stage 1 will also see an appointment of the Group Head Chef who will oversee new product development, training and quality control across the whole estate.
  • Stage 1 — integration of our supply chain into the existing structure that was set by original Kebabooms
  • Exploring options to set up dark/prep kitchen
  • During the Stage 1 emphasis will be on generating cash flow
  • Stage 2 will overlap with Stage 1 in terms of launching a new fundraising campaign to raise additional €40,000–60,000 (with €40,000 being a minimum amount that is needed to set up a new Kebaboom outlet)
  • Stage 2 will also see further integration of the company’s logistics into the existing supply chain, setting up and development of the dark/prep kitchen if it makes sense.
  • During this stage we will be aiming to bring the first of our new outlets to operational break-even and launching second outlet
  • Stage 3 will see us opening third outlet, concentrating on improving financial results of the first two outlets and firming up our plans for Stage 4 and beyond.
Market&Competition

Kebab outlets in Tallinn

Estonian street food culture was almost non-existent until 2014 when the first Tallinn Street Food Festival took place. In 2014 there were around 40 participants while in 2020 festival was supposed to attract over 100 participants, however, that year’s festival was postponed due to Covid-19-related quarantine.

When it comes to kebabs there are just over 100 outlets selling them in Tallinn, as a speciality or part of a much wider offering, including Olerex petrol stations that also offer kebabs in various forms starting from salad with kebab priced at €4.95 to €5.90 for a large tortilla kebab.

Overall, kebab prices in Tallinn vary, depending on the size of  he dish, from €4.00 to €9.50 with €5.90–6.50 being more or less the price that one would be expected to pay for a kebab with a side dish like French fries or salad and rice.

According to statistics taken from Wikipedia Finland is a home of over 1,000 restaurants that serve kebab foods which makes it roughly one kebab outlet per 5,000 people with Helsinki having 174 restaurants which makes it just over 3500 residents per restaurant. Based on proximity to Helsinki and certain market developments influences as well as gradual changes in eating-out habits of local residents we estimate that we can open further 5-10 Kebaboom outlets in Tallinn and its suburbs as long as we do  not lose momentum and keep the quality of our offering at high level.

Both campaigns’ aim is to raise €40,000–60,000 through the issuance of Loan Notes to fund opening of three Kebaboom outlets under the umbrella of Uued Kebabipoed OÜ.

Specially designed merchandise (to be confirmed, but each stage will have different designs) a 20% discount* in all Kebaboom outlets for the duration of the Loan Note Term and a personal ‘Thank you’ letter from Andrei Lesment.

Lenders will be invited to a private event hosted by Andrei Lesment in either Kaja Pizza Köök or One Sixty Smokehouse, Telliskivi as well as enjoy specially designed merchandise and a 20% discount* in all Kebaboom outlets for the duration of the Loan Note Term.

All Lenders will also be given opportunity to participate in the planned equity fundraising to fuel group’s expansion across Estonia and into neighbouring markets.
